Title: Alsatian Cassoulet

Yield: 8 Servings

1lgRed cabbage; thinly sliced
2lgHeads cauliflower; cut into florets
2cCooked seitan; chopped
2cUnpeeled apples; sliced
2cWhite beans; cooked
2tbCaraway seeds
1/2cShallots; chopped
3cVegetable stock or dark beer
1tbPepper
1/4tsSalt
1/2cWhole wheat flour

Preheat oven to 450 deg.

Combine all ingredietns, except flour, in a large roasting pan or casserole dish. Sprinkle top with flour.

Place in oven and cook, uncovered, for 30 minutes.

Reduce heat to 250 deg. Cover and cook for 20 hours, stirring occasionally. Serve hot.
